Peanut Butter Filled Chocolate Cookies

  • 1/2 Cup unsalted butter
  • 1/2 Cup sugar , plus extra
  • 1/2 Cup brown sugar
  • 1 Cup peanut butter
  • 1 eggs
  • 1 tsp vanilla extract
  • 1 1/2 Cup all purpose flour
  • 1/2 Cup cocoa powder
  • 1/2 tsp baking soda
  • 3/4 Cup powdered sugar
Preheat oven to 375 ℉. Combine first 3 ingredients and 1/4 whole cup peanut butter peanut butter in the bowl of an electric mixer. Beat 2-3 minutes, or until fluffy. Beat in egg and vanilla. Sift together flour, cocoa and baking soda in another bowl. Stir into butter mixture and mix thoroughly. Form into 1.5 inch balls. Combine remaining peanut butter and powdered sugar in a bowl. Form into 1.5 inch balls. With floured hands, press your thumb into a chocolate ball, making a large indentation. Press a peanut butter ball into hole and form chocolate around dough. Repeat with remaining dough balls. Arrange cookies 2 inch apart on an ungreased cookie sheet. Flatten slightly with a cup dipped in powdered sugar. Bake 7-8 minutes until golden.
