Lemonade Cake

  • 1 small package lemon gelatin desserts
  • 6 Fl Oz hot water
  • 1 package lemon cake mixes
  • 4 eggs
  • 6 Fl Oz vegetable oil
  • 3 3/4 Fl Oz frozen lemonade concentrate , thawed
  • 1 Cup sugar
Preheat oven to 300 ℉. Butter and flour a bundt pan and set aside. Dissolve gelatin in hot water and set aside. Do not let it jell. Combine next 3 ingredients in a large bowl. Mix thoroughly with an electric mixer. Add gelatin and beat 3 minutes on medium speed. Pour into prepared pan. Bake 1 hour, or until a tester comes out clean when inserted in center. Meanwhile, combine thawed lemonade concentrate and sugar in a bowl. Stir to combine and set aside while cake is baking. Transfer cake to a wire rack. Cool 5 minutes. Stir lemonade-sugar mixture and pour about 2/3 of it over cake while in pan, loosening sides of cake from pan to allow mixture to flow down pan. Let stand another 10 minutes before turning cake out onto a platter. Pour remaining lemon syrup over top.
