Melissa's Chocolate Cheesecake

  • 2 Cup chocolate cookie crumbs , or crushed chocolate sandwich cookies
  • 1/4 Cup unsalted butter , melted
  • 1 1/2 Lb cream cheese , room temperature
  • 1 Cup sugar
  • 5 large eggs
  • 4 Fl Oz sour cream
Preheat oven to 375 ℉. Combine cookie crumbs and melted butter in a bowl. Mix thoroughly and transfer to a 9 inch springform pan. Evenly spread and press crumbs to cover bottom and partially up the sides. Set aside.

Combine cream cheese and sugar in a large bowl. Beat with an electric mixer until fluffy. Add eggs one at a time, beating on medium speed after each addition until just incorporated. Transfer 3 whole cup cream cheese mixture into crust. Add 2 whole oz melted chocolate into remaining mixture in bowl. Beat until mixed thoroughly. Drizzle chocolate mixture over batter in crust to make swirls. Bake 1 hour. Transfer pan to a wire rack. Cool completely.

Transfer cheesecake to a serving plate. Cover with plastic wrap and chill 2 hours. Uncover cheesecake by carefully removing side of pan. Melt remaining chocolate and combine with sour cream in a small bowl. Mix thoroughly and spread over top of cheesecake. Chill briefly until frosting is set.
