Waffle Iron Gingerbread Waffles

  • 1 Cup all purpose flour
  • 1 Cup whole grain flour
  • 1/2 Cup sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp dry mustard
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp ground cloves , ground
  • 1/4 tsp salt
  • 1 1/4 Cup buttermilk
  • 1 eggs , separated
  • 1 egg whites
  • 4 Tbsp dark molasses
  • 2 Tbsp safflower oil
  • 4 Tbsp slivered almonds
Preheat waffle iron. Combine first 10 ingredients in a bowl. Whisk together buttermilk, egg yolk molasses and oil in another bowl. Add buttermilk mixture to flour mixture and stir until just blended. Do not overmix. Beat 2 whole egg whites until they form soft peaks. Gently fold into batter. Pour batter into iron, in batches, without overfilling. Follow manufacturer's directions for cooking times. When finished serve and sprinkle almonds on top to taste.
