Spinach Salad with Mustard Dressing

  • 1 1/2 Lb spinach leaves , washed and torn into pieces, tough stems discarded
  • 2 Cup mushrooms , sliced
  • 1 Cup cherry tomatoes , cut in half
  • 2 1/2 Fl Oz olive oil
  • 3 Tbsp red wine vinegar
  • 3 tsp mustard
  • 2 cloves garlic , crushed
  • 1/4 tsp salt to taste (optional)
Combine spinach, mushrooms and tomatoes in a salad bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over spinach and toss.
