Fresh Spinach Salad

  • 1 Lb spinach leaves , torn into pieces
  • 1/2 Cup tomatoes , chopped
  • 3/4 Cup strawberries , sliced
  • 1/2 Cup red onions, diced
  • 1 large papayas , peeled, seeded and cut into .5 in. cubes
  • 4 Tbsp water chestnuts , sliced
  • 4 Tbsp mozzarella cheese, shredded
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp lemon juice
  • 3 tsp water
  • 3 tsp orange juice concentrate
  • 1 tsp honey
  • 1 green onions , minced
  • 2 Tbsp dill , or 1 tsp. dried
  • 3 Tbsp olive oil
Place first 7 ingredients in a salad bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake well, pour over spinach mixture and toss well to coat.
